Cissy Nantume from Classic Africa Safaris, shared her go-to recipe for mandazis, an East African donut which is often enjoyed with tea in Uganda.
Ingredients:
- 420g of all purpose flour
- 150g of sugar
- half tsp baking powder
- 1 tbsp lemon rind
- 1 tbsp cardamon powder or cinnamon powder
- half tsp salt
- 100g butter/margarine
- 1 egg
- 1 tbsp vanilla essence
- 110ml warm milk
- enough cooking oil for deep frying
Method:
- Dissolve sugar in milk.
- Mix rest of dry ingredients.
- Add beaten egg, milk and vanilla essence.
- Knead dough until firm.
- Roll out dough on flat surface.
- Cut out desired shapes.
- Deep fry until golden brown.
